The food-related causes of obesity and diabetes are now well recognized. The great challege is to apply current knowledge to urgent preventive dietary changes. Basic biochemistry is outlined for dietary carbohydrates, carbs, and for blood glucose and insulin response. The concept GI per weight is useful for choice of foods. Examples are given and discussed for fast and slow carbs.
