Doctoral Student at Food and Nutrition Science

Mikaela Isabel Badager is a PhD student at the division of Food and Nutrition Science working on the Formas-funded 3D-MIX project. Her research is centered around mixed and hybrid food products, exploring innovative ways to revalorize and combine underutilized side-stream ingredients from food process industries to create nutritious and sustainable alternatives to animal-based food products with improved functionality, nutritional profile and taste. Another focus of her project is to explore the use of mixed ingredients in texturized alternatives to animal-based products through 3D food printing and high moisture extrusion.
