BYTE2BITE - The effects of digitalization of the food sector on urban freight transportation
Research Project, 2025 – 2026

Digitalization is transforming the food sector, leading to the rapid emergence of dark kitchens—facilities that produce meals exclusively for delivery. This project studies the developement and impacts of dark kitchens in using datasets from the main platforms in India and Latin America. The project sheds light on the level of development of dark kitchens in Sweden, how they operate and their potential impact on the transportation system.
