Valorization and nutritional assessment of three native Mozambican fruits in Mozambique

In Mozambique, as in many African countries, providing sufficient food for the population is a key challenge. The agricultural and food production is of major importance for sustainable national development of Mozambique. The project is part of the training partnership PhD program “Food Technology and Food Safety (FTFS)” between the Eduardo Mondlane University (UEM), Mozambique and Sweden 2017 -2022.
The project will basically consist of the nutritional and antinutritional characterization of some wild fruits of Mozambique. After characterization the fruits will be processed to develop new products.
The implementation of this project, in addition to increasing the value and the availability period of the selected fruits and products, will contribute to increase the number of studies in the area of natural products and Food Science at the Department of Chemistry of UEM, and the research capacity, which will benefit the country in general.
