Food waste at the end of the supply chain A consumer logistics perspective

The purpose of this paper is to investigate value-recovery options for food waste reduction in supply chains with particular focus on the consumer as a focal actor in the logistic system. Traditionally, environmental sustainability and energy efficiency of supply chain is associated with particular logistics activities such as transportation and warehousing, focusing on the levels of the supply chains upstream from the consumer-level. In this paper, we suggest that focus on products and the way by which consumers as key actors in the logistic system have great potential in contributing to sustainable development of supply chains.
