Towards a logistic organization for organic-local product supply in school canteen distribution systems

The aim of the present work is to understand the implications of an organic-local product supply policy to carry out an evaluation of the logistic organization. The method employed defines a framework that integrates the scenarios construction and the modelling of transport schemes by the assignment of local producers to logistics platforms and school canteens. Results suggest that the introduction of local products in school canteen's menu may lead to logistics gains only if an efficient logistics organization of the local producers is developed. Finally, the framework proposed could be used to support the decision makers to establish potential collaborations with the local producers to improve the current food distribution systems for school canteens.
