José Villacís-Chiriboga

Postdoc at Food and Nutrition Science

José is a postdoc researcher at the Department of Life Sciences (LIFE) in the Division of Food and Nutrition Science. His current research focuses on the mitigation of off-flavors and antinutrients in Swedish pea protein isolate. Likewise, his focus is on a total biorefinery of biomass, meaning that besides protein, he evaluates other valuable nutrients present in the biomass.

His research interests include biorefinery via green extraction solvents (e.g., SC-CO2, pressurized water extraction) and nutritional evaluation of plant-derived nutrients, such as proteins and dietary fibers
