Nathalie Scheers forskar inom området molekylär nutrition. Hon och hennes team studerar intracellulära/extracellulära effekter av absorberade näringsämnen i tarmen så som t. ex. metaller, gluten eller fiskprotein. Det kan handla om reglering av transportprotein och enzymer eller stress som kan leda till t.e x. cancer, celldöd, eller oxidativa skador. Som arbetsverktyg använder de humana cell- och vävnadskulturer samt interventionsstudier i människa för att översätta resultaten.
